Classic Chardonnay 2023, 750ml

Appearance: Medium lemon.

Bouquet: On the nose, the aroma unfolds with nuances of baked apple, lemon zest, apricot, toasted bread, and a coastal essence of oyster shell. Delicious spice characters like cinnamon and nutmeg follow, accompanied by intense ripened fruit notes of yellow peach, golden apple, and lemon curd.

Palate: On the palate, a gentle structure carries flavours of mandarin, orange blossom, toasted bread, yeast, and a touch of minerality. Tertiary hints of almond and honeycomb add depth. This gorgeous chardonnay is well-balanced, with vibrant, bright acidity and a medium alcohol level.

Harvested in the cool of the morning, one parcel of wine (80% of the blend) was barrel fermented on yeast lees for 6 months in predominately French barrels (40% new) to contribute to complexity, integration and richness. The second parcel (20% of the blend) was selected for its integral aromatics and elegance they displayed. The wine was racked off gross yeast lees after fermenting and spent 6 months on fine yeast lees to add subtle toast characters and a dimension of palate weight. Both parcels were blended before bottling. No animal products are used for fining or filtration. Vegan Friendly.
