Limited Release Cabernet Sauvignon 2017, 750ml

Appearance: Deep garnet.

Bouquet: On the nose, primary fruit notes of dark plum and raisin remain vivid, retaining their youthful energy. The unique vegetal characteristic of Cabernet intermingles gracefully, revealing layers of Green Sicilian olive and a subtle touch of black truffle. A pronounced intensity of aroma leads to an exploration of tertiary developments: cigar box, leather, and notes of forest floor.

Palate: Silky, velvety tannins are accompanied by the backbone of acidity. The concentrated flavours of dry violet, plum, and sultana intertwine harmoniously, while notes of coffee bean, worn leather, and the delicate essence of pencil shavings play their part. This is the pinnacle of our Cabernet offerings that have matured gracefully over the years, now ready to be enjoyed. This offering stands as a testament to Blewitt Spring Cabernet's aging potential, a hidden gem in the shadow of its Shiraz and Grenache siblings.

Selected from our most intense, balanced and well-structured batch of McLaren Vale Cabernet. From Selected vineyards in McLaren Vale, only the best parcels are utilised for this maturation program, with only the finest barrels selected for bottling. A limited release which varying quantities produced each vintage. 180 dozen produced in 2016. The oak maturation was a very small portion of American oak, along with combination of French oak, 80% old and 20% new. The oak profile has complimented the quality of the fruit without overpowering or dominating the final blend.
