Estate Cabernet Sauvignon 2020, 750ml

Appearance: Deep garnet with a tawny hue.

Bouquet: On the nose, it displays black oolong tea, dates, and dry violets interlaced with a hint of forest floor underneath. Notes of green bell pepper and tomato leaf. Still fresh and vibrant, with subtle accents of leather and mushroom.

Palate: On the palate, the wine exhibits a graceful maturity, yet pulses with unexpected vibrancy and freshness. Full-bodied, once-firm tannins now transformed into a velvety texture. Flavours of ripe black cherries, cassis, dried plums, and dried figs. Subtle dark chocolate and eucalyptus add depth to the ensemble. The wine's structure is maintained by a balanced acidity, which gives a refreshing lift to the experience.

Sourced from the Beresford Estate Vineyard in the cool sub-region of Blewitt Springs, parcels were harvested separately based on flavour and tannin ripeness. Due to the diligence of the dedicated vineyard team, we are able to ferment these lovely little parcels separately in our small two and four-tonne open fermenters. Further complexity is added with 20% of the blend receiving 3 years of maturation in seasoned American oak hogsheads and 30% in new 3-year seasoned French oak. The balance of the blend is matured in 2 and 3-year-old French oak hogsheads. No animal products are used for fining or filtration. Vegan Friendly.
